Bunch Medium to big sized bunch, cylindrical, quite compact, often winged, it takes to medium spherical berries of rich yellow colour.
Vinification The grapes are manually harvested, the vinification starts with a gentle pressing next the must obtained is allowed to settle. After 48 hours the must is removed from the lees at low temperatures. The now-clarified must ferments in temperature controlled (18° C) stainless steel tanks.
Wine The hue is straw-yellow with golden highlights. Soft and refreshing with geranium typical notes and a pleasant citrusity blended into apricot reminiscences. Malvasia Istriana has a delicate nose of summer’ fruits.
What we eat with it Istria raw langoustines, grilled anchovies with "radicchio" and beans salad, aubergine rolls stuffed with feta and Mediterranean herbs.
