Vinification: |
After the grapes are harvested by hand, the
vinification proceeds with a brief contact of the must with the dregs
for about 4 hours at 6° C; gentle pressing and cold washing of the
must. Fermented at a controlled temperature of about 16-18° C in
stainless steel barrels. |

Wine: |
A delicate and velvety white wine with a rather high
alcoholic content and acidity. Bursting, typical aroma, reminiscent of
yellow flowers, sage, mint, peppers, tomato-leaves, basil. Fruit
aromas are released over time. |

Food
matchings: |
Great aperitiv, this wine goes well with spicy main
courses, creams and soups with aromatic herbs but also with freshwater
or lagoon fish, sautéed cuttlefish, marinated herrings or grilled
sardines. |
