Historical note: |
Sauvignon is yet another
example of vine coming from France and which has been grown already
for a long time in Friuli, particularly in the area called Collio. |

Bunch: |
Small-to-medium sized,
cylindrical, compact bunch with two small wings; the grapes are medium
or large in size with a yellow-greenish pruinose skin. The two
medium-sized grape-pips are pear-shaped. |

Vinification: |
The vinification can
proceed with a brief contact with the dregs for 8 hours at 5°C; gentle
pressing and cold washing of the must; fermentation in stainless steel
cisterns at controlled temperature (~18°C); refinement on yeast 8
months; maturation in bottle for 6 months. |

Wine: |
White vinification leads
this finely aromatic, delicate and dry wine to a yellow-greenish
colour. Both the bouquet and the taste recalls exotic fruits, yellow
peppers, tomato leaf and melon. |

Food matchings: |
A wine that can be drunk
as aperitif, it matches hors-d’oeuvre with ham, first quality fish,
such as sea crayfish, European lobster, prawns, salmon and fish in
sauce, creamy and delicate soups. |
