Bunch: |
The bunch is compact,
small, cylindrical shape and one or two wings; has a yellow colour
with pruinose skin. The pulp is loose; each grape has two or three
grape-pips. |

Vinification: |
The vinification can
proceed with a brief contact with the dregs for 12 hours; gentle
pressing and cold washing of the must; partly in wood fermented (40%)
and partly in stainless steel cisterns (60%); fermentation at
controlled temperature (18°C); refinement on yeast 8 months;
maturation in bottle for 6 months. |

Wine: |
The wine has a strong
personality.Its alcoholic content, delicate, noble and smooth-bodied.
The bouquet is clearly defined, delicately scented of acacia. The
taste is dry but gentle, round, pleasantly bitter, with a neat smell
of exotic fruits. |

Food matchings: |
It is perfect with
hors-d’oeuvre, especially ham, as well as with light soups, white meat,
cheese. |
