Vinification: |
These varieties are harvested exclusively by hand during the last
decade of September.
De-stemming, cold marceration of the skins for two days at 7°C,
fermentation at 26°-28°C with frequent pumping of the must over the
grapes and wine-crushing; malo-lactic decomposition in steel and
permanence of the fine dregs for at least 5 months; refinement in wood
for 12 months; maturation in bottle for 8 months. |

Wine: |
Intense ruby colour, the aroma recalls dried flowers, kirsch, hints of
resin, blackberries, wild-strawberry and cherry-pie, very intense and
complex. Soft and warm in the taste, it has good tannin-acidity
balance, and the long finish is remarkably fruity.
Surely, this is an impressive wine with ample margins for development. |
