The vinification proceeds with a brief contact of about
12 hours with the skins; gentle pressing and cold washing of the
must; this wine is fermented (100%) in French oak barrique
“Allier”(these small barrels do not allow the temperature to be over
26-28°C); refinement on yeast for 8 months first and then in bottle
for another 12 months. |
|
Wine: |
Straw yellow colour with
greenish tints in the reflections and golden shades, the Collio Bianco
“Klin” has a complex nose, elegant but very intense at the same time;
hints of mixed fruits, sweet pastries, pear and a vein of acacia-honey.
The taste has a full correspondence with the expectations, ample with
a very well balanced acidity: the texture is fine and powerful at the
same time, excellent long finish.
The youthful fragrance that is revealed to the palate makes this wine
extremely pleasant and it will certainly assure a good ageing of this
vintage. |

Food matchings: |
It is an extraordinary
wine for meditation, grilled fish, white meat.
